what is a kosher diet?

Newbie
I started dating this new girl and she follows a kosher diet so i have to be careful what i cook for her and what restaurant I take her to. this is our first time eating dinner at my place coming up and i want to cook her something that is acceptable for her and researching it is all over the place, any good tips for what to make her?
 
I think they dont eat pork or shellfish but you would need to eat more protein less carbs than the diet has. It's closer to Mediterranean diet.
 
if you take her to a restaurant make sure the menu is flexible and she will find something that fits her kosher diet

if you cook her food at home you can either shop at a kosher grocery store or you can simply ask her what she likes. she volunteered that information to you because it is important to her so make sure you LISTEN. women cannot stand when guys are told something and don't listen.
