This isnt canned but the hardest part is cooking ground beef. And man is it hearty and warms you to the core.
Crockpot Taco Soup
1 lb. ground beef
1 onion, chopped
2 (16 oz) cans black beans, with liquid
1 (15 oz) can corn, with liquid
1 (8 oz) can tomato sauce
2 c. water
2 (14.5 oz) cans diced tomatoes
1 (4 oz) can diced green chile peppers
1 package taco seasoning mix
Cook ground beef in a medium skillet until brown; drain.
Place all ingredients in slow cooker and stir til combined. Cook on low setting for 6-8 hours.
Serve soup in bowls, and top with tortilla chips and shredded cheddar cheese.

I love Mex and Italian so heres a good one for the Italian food lovers.
LASAGNA SOUP
3 large cans peeled tomatoes
4 cans tomato paste
2 medium-sized onions
2 lb. hamburger
2 (1 lb.) boxes lasagna noodles
salt and pepper to taste
5 small cans tomato sauce
3 green peppers
3 small cans mushrooms
4 cloves garlic
3 lb. cottage cheese
3 Tbsp. oregano
Put all ingredients except cottage cheese and noodles into very large pot. Add 3 or 4 cans of water (use large tomato cans to measure). Cook over medium heat until meat and vegetables are cooked. One hour prior to serving, add cottage cheese and lasagna noodles (pre-cook noodles for half of cooking time) and 1 can water. Makes a very large batch.

BTW, here is my favorite soup Tortilla soup in the vita mix.
one tomato, one carrot, 1/4 onion, clove garlic, stalk of celery, 2 cups of hot chicken broth, a couple of dashes of Blend it Up seasoning, a hot chili pepper, a wedge of any cheese in the fridge... blend high for a few minutes, add in 1/2 can of corn, 1/2 can of beans, blend on low for a few seconds, serve with crumbled tortilla chips... delish.
